Warm Winter Oatmeal

This oatmeal is one of my favorites when I am trying not to eat sugar but want something warm, hearty, satisfying, and sweet for breakfast. I added chopped dates, granny smith apple, cinnamon, almond milk, toasted walnuts, and vegan butter to create a rich, creamy oatmeal packed with flavor and texture. You can always add more milk at the end, top it with yogurt or granola, or add sweetener such as maple syrup.

Recipe: yields two large servings

1 cup rolled oats

2 cups water

pinch of salt

1/2 teaspoon cinnamon or to taste

2 chopped dates

1/2 tart apple chopped into 1/2 inch chunks

1/2 cup toasted walnuts

2 tsp Myokos vegan butter, or alternative

1/8 cup almond milk, or more to taste


In a medium saucepan heat the water and oats over high heat until it boils, reduce the heat to a simmer and add the apple, dates, salt, and cinnamon. Cook, stirring often until until the oats thicken and soften, about 5 minutes. Add the almond milk and continue to simmer for another 2-3 minutes, or until desired thickness. Remove from heat and serve with toasted walnuts, vegan butter, maple syrup (if desired), and more almond milk if needed.
