Clarity Smoothie!

Ali: What a thrill be working on an across-the-country food blog with my daughter Marci! We connect a lot during the pandemic via texts of what we have just made, of a recipe either of us just tried, or text photos of food finds from NYC(Marci) or NM (me). Marci had the idea to share our favorite recipes and cooking adventures in a blog. I love telling stories, so I'll be telling the stories behind some of the recipes I have created for clients I have cooked or made for family and the recipes I keep coming back to.....

This smoothie came about when I was working as a private wellness chef for NYC clients and also at a vegan cafe in downtown NYC. I wanted to create a smoothie for yoga practitioners and yoga instructors as well as for my busy private clients that would support hydration, circulation, provide protein, healthy fats, fresh greens and hopefully reduce inflammation.

Ingredients: *Organic if possible!

3 cups coconut water

1 tablespoon minced fresh ginger root

1/2 teaspoon turmeric powder

2 pitted dates

2 tablespoons smooth almond butter, no palm oil added, just plain almond butter

2- 2.5 cups rinsed and torn kale leaves, stems removed

2/3 cups frozen mango chunks

2/3 cup frozen banana slices

1/4 cup fresh-squeezed lemon juice

1/3 cup fresh avocado (seriously!)

2 teaspoons liquid sweetener of your choice: raw honey, agave, maple syrup, or coconut nectar

*The mango and banana pieces really do have to be frozen in order for them to act as a thickener for the Clarity. The avocado adds a good source of fat and also makes for a creamier texture.

Add coconut water, ginger, turmeric, dates, lemon juice and when smooth, add the remaining ingredients until well blended and no chunks remain. Add more coconut water if too thick. (I use a Vita-Mix)
